What a lovely day it is today! I made this for dessert:
It’s a delicious chocolate mousse. It is so creamy and decadent. I love that the raspberries on top look like little red hearts!
Vegan Chocolate Mousse
1 package silken tofu
10 oz vegan chocolate chips (I used semi-sweet Ghirardelli)
3 T maple syrup
raspberries (or any other topping)
Put silken tofu in food processor or blender and blend until creamy. Using double broiler, melt chocolate chips on stove. Add maple syrup to melted chocolate chips, and combine. Add chocolate chip/maple syrup mixture to FP/blender. Whip until your little heart desires. Put into cute little glasses and try not to eat all of it en route to the refrigerator. YUM!
